Tio Pepe Sherry

Tio Pepe is a fino sherry made by González Byass in Jerez de la Frontera, Spain. It is aged under a layer of flor yeast in a solera system, giving a bone-dry, pale wine with a saline, nutty edge. Serve it well chilled as an aperitif or in dry sherry cocktails.
